Zucchini Quiche--------
For this tasty Zucchini Quiche Recipe you will need the following ingredients:
- 1 chopped or diced red onion
- 2 large chopped or diced zucchini
- 6oz grated cheese. If possible you should use a hard goat cheese in this recipe as the flavour really complements that of the zucchini
- 2 tablespoons of olive oil
- 2 large pinches of fresh, chopped basil
- 3 well beaten eggs
- 1 and 1/4 cups of milk
- Salt and pepper for seasoning
- Pre Made Mini Quiche Tartlet Shells
Method of Preparation:
- Preheat your oven to 350F, 180C or Gas mark 4.
- In a frying pan or skillet, sweat the onions in the oil for around 5 minutes, until they become soft.
- Add the chopped zucchini and fry the mixture for a further 5 minutes.
- Spoon the onion and zucchini mixture in to your pre-prepared mini quiche pastry shells and scatter most of your cheese and your large pinches of basil on top.
- Next you need to thoroughly beat together your eggs, milk and chosen seasoning. You can choose any seasoning you like for this recipe, so it is advisable to experiment with something new each time until you find the perfect taste.
- Carefully pour the egg/milk mixture over the contents of the mini quiche pastry shells and top off with the rest of your cheese. Again, this recipe can taste very different depending on what cheese you use so try a few of your favorites until you find one you really like.
- When you are happy with the mini quiche, place it in to your preheated oven for around 40 minutes, or until it just starts to rise and is firm to the touch in the centre.

The finished zucchini quiche is best served warm, however leave it to cool slightly before serving. Alternatively you can allow the quiche to go cold and refrigerate it for snacking on later in the day. Either way, this is a tasty summer accompaniment that goes well with green salad, fries or new potatoes.
