Vegetarian Quiche--------

Depending on how many mini quiche crusts you have available will determine how many eggs you will need to use in your mini quiche recipe. Starting with 8 eggs most quiche recipes will make about 40 mini quiche tartlets.

Bruchetta Quiche

Start with 8 eggs and add 1/2 cup of whole milk. Whisk together with 1/2 teaspoon of salt and pepper.

Take two shallots cut in half, 2 cloves of garlic, 4 small Roma tomatoes, 1/4 cup fresh basil, 2 tablespoons of olive oil and place all ingredients directly into the food processor. Pulse until you have a salsa like consistency.

Stir this vegetable mix into the egg mixture. Add 8 ounces of crumbled feta cheese and stir until combined.


Fill the mini quiche crusts with the above quiche recipe and bake at 375 for 8-10 minutes or until the egg mixture puffs up slightly in the mini quiche tartlet shell. A toothpick should come out clean and the top should be a golden brown. 

The feta cheese used in this recipe has a strong salty flavor making even meat eaters salivate over this dish. The garlic and the shallots give an added punch without being over powering and the olive oil adds added fat to make this dish more satisfying. Finally the Roma tomatoes and basil add a wonderful freshness that makes this dish tasty and light.

Potato, Broccoli, Cauliflower Quiche

This vegetarian quiche is a delicious way to use leftover vegetables and can be used as a vegan option if needed.

Start with the same base in the previous recipe. 8 eggs, whisked together with 1/2 cup whole milk and 1/2 teaspoon of salt and pepper.

Next in a food processor, dice 1 medium white onion, and 2 small potatoes.

Using a knife dice up cauliflower and broccoli to yield about 1 cup.

Place vegetables, potatoes, and onions on a baking sheet and drizzle with olive oil until lightly coated. Using good kosher salt and fresh ground pepper sprinkle over entire mixture. Roast at 350 degrees for 20 minutes or until tender.

Stir the pre roasted vegetables into egg mixture and then add 8 ounces of shredded cheddar cheese. Bake at 375 for 8-10 minutes or until egg mixture puffs.

If you choose it is possible to use egg, milk, and cheese substitute for a vegan option. However, this will change the flavor and consistency but should make it easy to adhere to any stringent vegan dietary demands.
