Sausage Quiche--------
This Sausage Quiche makes a wonderful Sunday morning breakfast dish or can be served for brunch. It is fairly simple to make and served with some salsa on the side and fresh fruit, rounds out your flavors, also hash browns are a welcome addition.
Ingredients:
- 4 eggs
- 1 - 1lb roll of regular, maple or hot pork sausage
- 1 8-10 oz can of cream of celery soup
- 1/3 cup of chopped onions
- 1/3 cup of chopped green bell peppers
- ¼ cup of milk
- 1 oz package of fancy shredded Mexican or cheddar cheese
- Pre Made Mini Quiche Tartlet Shells
Preheat oven to 350, place the tray of mini quiche shells in a cooking dish and slightly brown if not already prepared. Do not over cook the crust.
In a skillet, on stove top, brown the sausage, making sure to crumble and break it up into small pieces. Drain and set aside.
Mix eggs, cream of celery soup and milk together, whipping the eggs. Add salt, pepper to mixture and a dash red pepper, and garlic salt.
Next, you will need to sauté the peppers and onions in a skillet until clear and soft. You can sauté them in butter or a little bit of the sausage drippings. Mix in your sausage with the peppers and onions. Let them simmer a little bit until flavors have mixed well. Pour the mixture into the mini quiche tartlet shells over the crust.
Next you will need to add your egg mixture. Simply pour the egg mixture into the tartlet shells, do not stir the mini quiche.
Place in the oven and cook until the egg mixture is firm. Cover the top of the sausage quiche with cheese, and let cheese melt. It takes approximately 20 to 25 minutes for the egg mixture to cook through and be firm.

Ovens vary so keep checking before the time runs out as you don’t want it too firm. Once the cheese has melted, slice and serve. Again, salsa and some sour cream on the side can add some flavor even if it is for breakfast.
The difference in the sausage will change the flavor of your quiche a little. If you want to spice it up even more and serve if for lunch or dinner, you can use hot peppers in stead of bell peppers. Either way, sausage quiche is a great appetizer for any meal, gathering or event.
Changing the sides that go with it will also help to insure that the sausage quiche is guaranteed to be a hit.
