Crab Quiche--------
Impress your guests as you add a little Cajun flavor to these delightfully easy to prepare mini Crab Quiche appetizers. The rich flavor and texture is sure to be a winner, especially if used to compliment a seafood entree.
- 3 or 4 tablespoons of extra virgin olive oil
- 1/2 cup of onion, chopped
- 1/2 cup of bell pepper, chopped
- 1 clove garlic, minced
- 1/2 cup celery, chopped
- 4 eggs, lightly beaten
- 1/2 cup of evaporated milk
- 1/2 cup of water
- 1 cup of lump crab meat, shells and cartilage removed
( If using canned crab meat, drain well.) - 2 teaspoon of salt
- Cajun seasoning
- 2 or 3 sprigs fresh parsley, chopped
- 5 or 6 leaves of fresh basil, chopped
- 1 tablespoon of cornstarch
- 1/4 cup of cold water
- 2 cups of Swiss cheese, shredded
- Ready made 2 inch round mini quiche tartlet shells, unbaked
Preheat the oven to 350 degrees while the Crab Quiche filling is being prepared.
In a large skillet, saute the onion, bell pepper, garlic and celery in the extra virgin olive oil until vegetables are cooked.
In a medium bowl, beat the eggs, evaporated milk and water until blended. To the liquid mixture, add the crab meat, salt, Cajun seasoning, parsley and basil.
Blend the cornstarch with the cold water, stirring until there are no lumps, in a separate small bowl. Stir this into the Crab Quiche filling. Add one half of the shredded Swiss cheese to the filling and mix well.

Lightly grease the muffin pan with vegetable oil or cooking spray. Place the ready made, unbaked mini quiche tartlet shells in the appropriate size muffin pan. Pour the crab quiche filling into each shell and sprinkle the top of each mini quiche with the remaining shredded Swiss cheese. Place the muffin pan on a baking sheet to prevent spills. Bake in a preheated 350 degree oven for about 20 minutes or until firm. This crab quiche recipe should make about 32 mini quiches.
This recipe may also be adapted into a regular ten inch Cajun style Crab Quiche, perfect for a weekday brunch or a light Sunday supper.
