Goat Cheese Quiche

This recipe has been a family favorite and tradition for more than fifteen years, every holiday season during Thanksgiving and Christmas we enjoy making this Goat Cheese Mini Quiche recipe as a delicacy.

Goat cheese comes in a variety of forms, the most common form is the soft spreadable textured cheese, another form can come in a hard aged type of cheese like the Feta cheeses which can be used in soups, salads, and other fine dishes. This recipe also goes great with other cheeses such as Gruyere cheese, and Parmesan Cheese. Gruyere is a swiss cheese that’s aged 10 months and made by using more fat from cow’s milk which sweetens the nutty, buttery flavor, it melts easy and can be used in a variety of foods.


Starting out you will need these ingredients for the filling of our Goat Cheese Mini Quiche:

  1. Garlic clove (minced)
  2. Pound of fresh Spinach (discard the long stems and rinse leaves without drying)
  3. 1/2 cup of Heavy Cream
  4. 1 cup of Milk
  5. 2 Large Eggs
  6. 1/4 tablespoon ground pepper
  7. Teaspoon of Salt
  8. 1/2 pound of Goat Cheese
  9. Mini Quiche Tartlet Shells

Making the Mini Quiche Filling:

First you will need to heat a large skillet and add a large handful of spinach with temperature of skillet on high heat, stir spinach until it starts to wilt. After spinach has wilted, transfer it into a colander and set over a bowl; continue this until all spinach has been cooked, then let sit and cool. After teh spinach cools, squueze it dry and coarsely chop it. Now, take your minced garlic and toss it within your spinach then spread mixture evenly among your Mini Quiche pastry shells.

 
FLEXIPAN for MINI QUICHE TARTLETS

You will now need a medium bowl to whisk in all other ingredients; Whisk in the milk with the cream, eggs (yolks), salt and pepper. Now, using a spoon to scoop away chunks of the soft, spreadable goat cheese, add a dolop to each of the mini quiche tartlet shells on top of the spinach and garlic mixture. Pour the custard mix into the shell and let the mini quiche bake for 40 minutes or until the Cheese Quiche looks set.
