Broccoli Quiche--------
Broccoli and Mozzarella Quiche
Ingredients:
- 2 tablespoons butter
- 1 minced onion
- 1 teaspoon of minced garlic
- 2 cups of chopped fresh broccoli
- 1 1/2 cups of shredded mozzarella cheese
- 4 well beaten eggs
- 1 1/2 cups of milk
- 1 teaspoon of salt
- 1/2 teaspoon black pepper
- 1 tablespoon of melted butter
- Mini Quiche Tartlet Shells
Directions:
- Preheat the oven to 350 degrees F.
- Melt the butter in a large saucepan over medium to low heat.
- Combine the milk and eggs. Season them with salt and pepper. Stir the melted butter into the egg mixture.
- Fill your Mini Quiche Tartlet shells with a mixture of the vegetables and cheese.
- Pour the seasoned milk and egg mixture over over the cheese and vegetables in the Mini Quiche shells.
- Bake in the preheated oven for 30 minutes, or until the center has set.
Tips:
- You may substitute garlic powder for the minced garlic if you don’t have any on-hand.
- Make sure to use only fresh broccoli for the quiche, frozen broccoli contains a great deal of moisture and will most likely make the mini quiche too moist.
- To avoid a soggy crust, place a layer of cheese over the crust before adding the vegetable mixture. This will act as a barrier between the crust and any excess moisture from the filling.
Variations:
There are several variations to this Broccoli Mini Quiche recipe that will work well. If you would like to change up the recipe a bit try one of the following tips:
- Substitute Provolone or Cheddar Cheese in place of the Mozzarella.
- For a cheesier mini quiche add 1/2 cup of shredded cheese to the egg mixture. You can also sprinkle some cheese directly on top of the mini quiche before baking.
- For a less moist quiche sprinkle a bit of flour over the vegetable mixture before baking.
- If you would like to add more texture and flavor to the quiche try mixing in some different vegetables. A few that will work very well with this recipe include mushrooms or red peppers.
- The above recipe is for a vegetarian quiche. If you are not vegetarian then you can add some diced meat. Chicken, turkey or ham are all great choices and will complement the flavors of the broccoli mini quiche very well.
