Bisquick Quiche--------
There will be no crust left behind, when this easy-to-make Bisquick quiche is placed on the table.
Vegetables that are fresh from the garden will make this a special and perfect meal for a Saturday morning brunch. Serve this dish with a freshly tossed salad and it will become a light Sunday night supper. Whenever you serve this Bisquick quiche, it is sure to be a family favorite and one you will not mind preparing. The recipe could easily be prepared the night before and placed in the refrigerator.
These are the ingredients you will need:
- 1 or 2 tomatoes, chopped
- 3 or 4 leaves of fresh basil, chopped
- 2 tablespoons of finely chopped green onion
- 1 6.5 oz. can of sliced mushroom, drained and run through food processor
- 1/2 cup of ham, diced
- 1 1/2 cup of shredded sharp cheddar cheese
- 1 cup of Bisquick baking mix
- 4 eggs, beaten
- 2 cups of milk
- bacon bits
- dash of salt
- ground black pepper
The oven should be preheated at 400 degrees as the Bisquick quiche mixture is being prepared.
Lightly grease a mini quiche or mini muffin pan with your favorite anti sticking cooking spray. The Bisquick Quiche is basically a crustless quiche and the mini tartlet shells are not required for cooking this mini quiche recipe.
Layer the sections of the mini quiche pan with chopped tomatoes, then lightly sprinkle the chopped basil and green onion to cover the layer of tomatoes. The next layer will be the drained, chopped mushroom slices, then topped with the diced ham. (For a quicker method shake all the chopped ingredients in a bag and spoon into the mini quiche pan) Cover these ingredients using only one half of the shredded cheddar cheese. Set aside.

In a medium mixing bowl, thoroughly beat the eggs, milk, Bisquik, salt and pepper. Carefully pour the quiche batter into the mini quiche tray to cover the filling until the dish is almost full. Sprinkle the remaining cheese, then top with the bacon bits.
Place the Bisquick quiche on a cookie sheet to prevent spills while baking. Bake the quiche in a 400 degree oven for less than 40 minutes or until knife or toothpick comes out clean. Cool for about five to ten minutes then serve your Mini Bisquick Quiche.
